Winemaking
Fermentation of the must at a controlled temperature, followed by the creation of a blend containing just the right amount of acidity to allow ideal refermentation conditions of the yeast in the bottle.
Aroma
Pale yellow with delicate green reflections, pleasantly dry on the palate, with remarkable fruity notes of the golden apple combined with fragrances of crusty bread which increase if the yeasts are also poured. Its persistent yet gentle sparkle, moderate alcohol level and pleasantly “rustic” quality make this an extremely easy wine to just keep sipping away at.
Tasting
To drink young, it is always advisable to decant this wine, with or without yeast, depending on one’s preference. A good aperitif, for all meals with fish dishes, cold cuts, white meats, or even better, with skewered spit-roast meats, typical of the Valdobbiadene area.
